Are you new to sourdough? I first learned about it six years ago and made my first starter when we bought our house in January of 2019. I’ve learned a lot about it’s benefits from research but it’s been through my years of experience that I’ve learned how simple it can be to cook and bake with sourdough. It doesn’t have to be as complicated and precise as it can seem. Sourdough can be simple!
What is Sourdough?
Sourdough isn’t just a new trend going around on social media. While it has gained quite a bit of attention over the last few years it’s actually the most traditional way to make bread. Instant yeast wasn’t readily available so families would use sourdough starters that were passed down from generation to generation to make delicious and healthy loaves of bread. Sourdough starter is simply a naturally fermented mixture of flour and water that uses naturally occurring yeast to allow bread dough to rise. This results in baked goods that are full of nutrition and easier to digest.

Why make sourdough?
Making sourdough has several health benefits. Not only does it allow us to make food that is more nutritious and less processed, but it is also much easier for our bodies to digest. This is because the naturally occurring beneficial bacteria and yeast will work together to start the breakdown of starches found in grain. This fermentation process prior to baking and consuming the bread helps to break down the protein gluten and phytic acid while increasing the lactic acid.
So not only does sourdough bread contain more vitamins and minerals, but the fermentation process makes them more easily accessible when consumed and enhances the flavor. To make sourdough you can use all purpose flour, bread flour, whole wheat flour, rye flour, and/or other hearty grains like einkorn.

Active starter versus Sourdough Starter Discard
Its a common misconception that discard starter is garbage. This isn’t the case! There are so many uses for sourdough discard and it’s a great way to incorporate sourdough into simple everyday recipes. One of my favorite things about discard recipes is there usually isn’t a wait time. I can simply pull my starter out of the fridge and make my recipe. This means there’s no planning ahead or wait time.

Making Sourdough Simple
Breakfast can be a hectic time in our household because my family wakes up hungry and wants food quick. While I love a good sourdough bagel with cream cheese or English muffins, those sourdough recipes require me to plan ahead and make the dough the night before. Most nights I’m tired and I’m not thinking about what we’re eating for breakfast the next day. I might be the only one, but I think others can relate to this. I think this is why a lot of people get turned off from sourdough.
Unfortunately, sourdough has gotten a bad rep for requiring hours and hours of pre-planned doughs and timely stretch and folds. I’m here to tell you this doesn’t have to be the case! There is actually a lot of flexibility in making sourdough. When I tell people I don’t even measure my ingredients most times they look at me in disbelief. You can see my basic process for making a loaf of sourdough here.
Sourdough can be simple and take less time than you think, I promise! If you are looking for a simple sourdough recipe, this is a great recipe to start with!

Sourdough Discard Great Breakfast Recipe
One of my favorite ways to use up some of my leftover sourdough discard is by making these simple no wait delicious breakfast wraps. I love this easy breakfast recipe because its quick, simple, nutritious, and one of my families breakfast favorites. Perhaps the best part of this breakfast is you only need a pan and spatula, so clean up is minimal. The fewer dishes the better here! All you need to make this perfect breakfast is some sourdough discard, an egg, cheese, and seasonings.
Sourdough Discard– This recipe is the best way to use up a lot of sourdough discard, but bubbly sourdough starter will also work. For best results use room temperature discard but right out of the fridge is fine too.
Eggs– I typically use one egg per wrap, but my husband prefers his with two for the added protein.
Cheese– Shredded sharp cheddar is perfect for this recipe, but any cheese will do. You can also leave this out if you avoid dairy.
Spices– My favorite combination is Thyme, garlic powder, salt, and pepper. Crushed red pepper would be a great choice to add some kick.
These wraps can be made ahead of time as well. Just make the wrap and store it in an airtight container or a bowl covered with plastic wrap until you’re ready to take it out and heat it up. I would imagine they would freeze well too but I haven’t tried that yet.
Things you may need:
A cast iron skillet or nonstick pan
Spoon (I prefer to use a long wooden spoon for scooping out my sourdough)

Easy No Wait Sourdough Discard Breakfast Wrap
Ingredients
1/4 cup sourdough discard
1 egg
2 tablespoons grated sharp cheddar cheese
Thyme, garlic powder, salt, and pepper to taste
1/2 T Butter or oil to coat the pan
Directions
Preheat your cast-iron skillet on medium heat until it is hot. Add just enough butter or oil of choice to coat the pan.

Pour about 1/4 cup of sourdough discard on the pan and use a spoon or spatula to spread it out into an oval shape. You can use more for a larger wrap.

Once your discard is evenly spread crack an egg directly on top and use a spatula to break the yolk.

Turn your heat down to medium-low heat and sprinkle your seasonings over the egg. Let the wrap cook for 2-3 minutes or until the bottom of the wrap is golden brown and crispy.

Use your spatula to flip the wrap over. Sometimes part of the egg falls off onto the pan when flipping. That’s okay, just be sure to flip the wrap over and on top of the fallen egg so it cooks together.

After about 30 seconds to 1 minute (depending on how well done you want your egg to cook) flip your wrap back over and turn off the heat. Add your shredded cheese and fold the wrap in half.

That’s it! You just made a simple and nutritious breakfast!
