Sourdough has been making a huge comeback. Although there is a lot of new interest, it isn’t a new thing. In fact, sourdough is the original way bread was made.
I first learned about sourdough six years ago and made my first starter when we bought our house in January of 2019. I’ve learned a lot about it’s benefits from research but it’s been through my years of experience that I’ve learned how simple it can be to cook and bake with.
Sourdough doesn’t have to be as complicated and precise as it can seem. Sourdough can be simple!

What is Sourdough?
Sourdough starter is simply a naturally fermented mixture of flour and water that uses naturally occurring yeast to allow bread dough to rise. This results in baked goods that are full of nutrition and easier to digest.

Why make sourdough?
Making sourdough has several health benefits. Not only does it allow us to make food that is more nutritious and less processed, but it is also much easier for our bodies to digest. This is because the naturally occurring beneficial bacteria and yeast will work together to start the breakdown of starches found in grain. This fermentation process prior to baking and consuming the bread helps to break down the protein gluten and phytic acid while increasing the lactic acid.
So not only does sourdough bread contain more vitamins and minerals, but the fermentation process makes them more easily accessible when consumed and enhances the flavor. To make sourdough you can use all purpose flour, bread flour, whole wheat flour, rye flour, and/or other hearty grains like einkorn.

Active starter versus Sourdough Starter Discard
Its a common misconception that discard starter is garbage. This isn’t the case! There are so many uses for sourdough discard and it’s a great way to incorporate sourdough into simple everyday recipes. One of my favorite things about discard recipes is there usually isn’t a wait time. I can simply pull my starter out of the fridge and make my recipe. This means there’s no planning ahead or wait time.
One of my favorite sourdough discard recipes is my easy no wait sourdough discard flatbread pizzas.

Making Sourdough Simple
Unfortunately, sourdough has gotten a bad rep for requiring hours and hours of pre-planned doughs and timely stretch and folds. I’m here to tell you this doesn’t have to be the case! There is actually a lot of flexibility in making sourdough. When I tell people I don’t even measure my ingredients most times they look at me in disbelief. You can see my basic process for making a loaf of sourdough here.
These no wait sourdough discard flatbread pizzas are about as simple as sourdough can get. If you like quick and easy sourdough discard recipes, check out my easy sourdough discard breakfast wraps.
Sourdough can be simple and take less time than you think, I promise! If you are looking for a simple sourdough recipe, this is a great recipe to start with!

Sourdough Pizza
This simple sourdough pizza crust recipe is more like a flatbread with it’s thin crust. It’s similar to pizza, but it’s own variety if you will. Other sourdough pizza dough recipes will result in a more of a regular pizza dough with a classic thicker crust that can be baked on a pizza stone.
This sourdough discard pizza dough is thin and has a crispy crust on the outside and chewy in the center with that slight tangy flavor of sourdough. It is also quick to make and doesn’t require a lot of tools. No need to mix the dough ahead of time or pull out the stand mixer for this recipe!
These pizzas can be made ahead of time as well. Just store the cooked pizza in an airtight container or a plate covered with plastic wrap until you’re ready to take it out and heat it up. I would imagine they would freeze well too but I haven’t tried that yet.

Variations of Sourdough Discard Flatbreads
This easy sourdough flatbread recipe can be customized to your liking. While I love the classic red sauce and mozzarella, these flat breads are a great way to use up a lot of the fresh veggies that come in during garden season as well. For example, try a caprese version with sliced fresh tomatoes, fresh mozzarella, balsamic vinegar, and fresh basil. Or add a layer of sour cream to the flatbread dough topped with roasted peppers, onions, and garlic topped with a savory glaze.

One of my favorite ways to use up some of my leftover sourdough discard is by making these simple no wait delicious flatbread pizzas. I love this easy recipe because its quick, simple, uses basic ingredients, and one of my family’s favorite meals. All you need to make this easy sourdough pizza is some sourdough discard, sauce, cheese, and seasonings.
Sourdough Discard– This recipe is the best way to use up a lot of sourdough discard, but bubbly sourdough starter will also work. For best results use room temperature discard but right out of the fridge is fine too.
Sauce– I use regular marinara tomato sauce but pizza sauce would also be great. For a twist on this recipe you can experiment with using other sauces or creams, like a sour cream base with roasted veggies on top.
Cheese– Shredded mozzarella cheese is perfect for this recipe.
Spices & toppings– For my pizza I like to add a healthy amount of freeze dried garlic powder, basil, and just a bit of crushed red pepper. I also like a healthy sprinkling of good quality sea salt on the underside of the crust. You can include any spices and other favorite toppings you like, including peppers, black olives, and other classic pizza toppings.
Oil- I prefer avocado oil, but olive oil or another oil would also work

Things you may need:
A cast iron skillet or oven safe pan
Spoon (I prefer to use a long wooden spoon for scooping out my sourdough)
Pizza cutter
